BackOat & Raisin Cookies
makes 12 cookies
50 g butter, softened
3/4 cup dark brown sugar
1 egg
1/2 tsp vanilla extract
200 ml plain flour
1/2 cup rolled oats
1/4 tsp salt
1/2 tsp baking soda
3/4 tsp ground cinnamon
1/3 tsp ground nutmeg
1 cup raisins
- Preheat oven to 180°C, 350°F, Gas mark 4.
- Grease a large (18 x 12 inch) baking tray.
- Cream butter and sugar together in a large bowl.
- Add eggs and vanilla and beat mixture.
- In a separate bowl, mix flour, oats, salt, baking soda, cinnamon, nutmeg and raisins.
- Add dry ingredients to wet and mix.
- Divide mixture into 12 and arrange on baking tray.
- Bake for 15-20 minutes, until set and browned but not hard.
- Allow cookies to cool on baking tray before moving them.
- Keep in an airtight tin.
