Carrot & Celeriac Soup

serves about 6

2 tsp olive oil
1 large onion
450 g celeriac
450 g carrots 900 ml vegetable stock salt and pepper

• Peel and chop onion, carrot and celeriac.
• Fry onion in oil until softened.
• Add carrot and celeriac and cook for 5 minutes.
• Add stock and seasoning, stir and bring to boil.
• Cover and simmer for 20 minutes.
• Pour soup into blender and blend until smooth.
