Vegetable Lasagne

(serves 4)

1 carrot
1 onion
1 red pepper
1 aubergine
8oz button mushrooms
1 courgette
1 tbsp vegetable oil
2 cloves garlic
1 tbsp paprika
2 tsp dried mixed herbs
400g can chopped tomatoes
2 tbsp tomato puree
salt and pepper

5 sheets dried lasagne
4 sheets dried lasagne verdi

1/2 pint cheese sauce (bechamel)
grated cheddar and parmesan cheeses

Note - this recipe can easily be modified by using different vegetables, cheeses or lasagne.
